Divine Ivresse
Wine passionate Galatée Faivre has recently launched ‘Galatée – Divine Ivresse’ in Hong Kong, a limited collection of rare and exclusive French wines in their best vintage, carefully selected by Galatée herself.
Who are you?
I am a creative French woman who comes from a family of winemakers and whose ambition is to reveal wine’s best characteristics, its most divine features.
Where are you from?
I was born in Southern France, where I used to enjoy playing in the beautiful vineyards as a kid.
What is your current occupation?
I have been a chief winemaker, a wine consultant and wine critic for the past fifteen years.
Where do you currently live?
My main office is in Paris near the Invalides and Le Bon Marché, so I am based in the City of Light most of the time. But I often travel around, and I spend most of my weekends in Fleury, a charming little village by the sea in the South of France.
Where do you see yourself in five years?
In five years I would love to be able to communicate more with Chinese wine enthusiasts, to share our experiences and knowledge about wine.
What are the three words that best describe you?
The only word I can think of is ‘sincere’.
What is unique about you?
I am very fragile since I find it difficult to hide my feelings as an extremely sincere person, but I am also strong in that I always fight for the truth, and I rarely lose!
What is your favourite French restaurant / place in your current city?
In Paris there are many restaurants I love, but I would say my favourite is Alain Senderens’ ‘Le Passage’ near La Madeleine. In my village in the South of France, I used to go to this funny beach restaurant where I enjoyed having delicious lobster with my feet on the sand, but it recently closed down… I was so sad I bought four of its chairs!
What is your favourite French dish?
I have a passion for ‘escargots de Bourgogne’ (snails in garlic-herb butter).
What is (are) your favourite wine(s)?
Regarding my favourite French wines, check out my collection Galatée - Divine Ivresse to find out (there are six of them)! My favourite non-French wine is Dominus (US).
If you were a French brand, which one would you be?
Either Isabel Marrant or Hermès.
What is the first word that comes to your mind when thinking about “French Savoir-Vivre”?
Freedom!
